Khobz al tawa is a delicious bread from Yemen, it is especially popular in Aden and the southern areas. It gets the name tawa since it is cooked on a griddle or tawa. This is a layered flatbread with each layer greased with butter. Makes wonderful bread to enjoy a creamy gravy.
When you stuff Khobz al Tawa is stuffed with egg and cheese, it's called mutabak. With simple ingredients, it is nevertheless so delicious to enjoy with any side dish.
While I was checking out for flatbreads starting with K, I came across Kutti or Punjabi Choori, which is actually Indian roti crumbled with sugar. Since I was working on a subtheme, having another sweet bread was out of the question.
So I stuck with Khobz al Tawa which seems to have been tried by all my BM friends. I wanted to pick up from my friends and settled on Sapanaβs version. I also referred to Queen of Sheba, one of the popular sites on Yemeni Recipes.
I served it with a creamy vegetarian gravy and mutton gravy for the nonvegetarians at home. Everybody loved how buttery it is.
Khobz Al Tawa is my pick for K in A to Z International Flatbreads. If you are interested to know what's K for Street Food, Check my other space.

The Khobz sounds interesting with loads of butter. It definitely is another version of Lacha parathas, but in a different format:))The bread looks very flaky and I like the idea of roasting on a griddle..it gives the feel of a Indian bread.

Yemen bread is interesting, it's kind of look like vechu parotta in a way !!! Using butter in between each layer would enhance the taste and flavor i guess !!!

Many of the Swahili Arabs living in Mombasa had forefathers who came from Yemen many years ago. One of the most popular street food is egg chapati. The cooks or chefs will slap a dough on the work board to make the roti as thin as possible just the way you described for khobz al tawa. Before folding minced meat and egg is added and then the dough is folded over it. its cooked on a tawa and the roti is is flaky and soft.
