Having since known about this, we have made it a point to cook it at least once. When I asked Amma if she knows any recipe to cook this greens, she immediately told me to check one of the dairies we had made, which had different recipes with greens. So right on dot, I checked the dairy and it had all the recipes with different greens.
This Kootu is a simple one, and tastes great. And goes well with rice and rotis
Manathakkali Keerai Moong Dal Kootu
Manathakkali Keerai -1 bunch
Moong Dal – 1/2 cup
Oil – 2 tsp
Mustard Seeds, Urad dal – 1 tsp
Onions – 2 tbsp
Red chili powder – 1/2 tsp
For the paste
Green Chilies – 2
Cumin seeds – 1/2 tsp
Coconut, grated – 2 tbsp
How to make the Kootu
In a pressure cooker, heat oil saute the mustard seeds, urad dal, onions. then add the washed leaves till it gets soft. Then add moong dal, and saute well.
Then add water and pressure for 2 whistles. Once the pressure falls, add the ground paste and bring to boil.
Adjust salt and serve with rice or roti
