Cashew Nut Peas Pulao ~ Lunch Box Recipes for Kids

We are starting yet another BM edition, BM# 46, I am starting with Kids Delight theme, featuring Nuts and Legumes for Kid Friendly Lunch Box dishes. Now for the longest time I was so confused on what could possible be packed for a lunch box with these two ingredients. However the bloggers who already took up this theme, gave me an idea and I worked from it. 
I even decided that I will go ahead and pack as many different dishes as my kids might like. Of course if you know my kids, you might also know that my daughter is always my main customer for such new dishes. My twins are never game for any new dish when it comes to these dishes. Chocolates, yes they are. Not for a rice or a gravy, mind you. So it was still a surprise when both my boys loved this rice dish when I fed them. Peddu never likes cashews and Chinnu likes it as such. So I had to parse the cashews and feed one only that before proceeding with the rice.

This preferences of my boys always reminds me of my own childhood and
my brother. When we were kids, just to spite my brother and to my mom’s
ire, I always used to say no to dishes that he likes. My childhood was
not colourful at all, in sense that it used to be so boring as there
wasn’t anybody with whom I could fight. My brother used to readily give
me whatever I asked. So just for the heck of it, I used to pull a fight.
Even that never used to work out, as he always stops before it even
began. Imagine how hard it is for a kid to grow up, without fighting
with a sibling!

I see that to some extent with my kids
now. My kids don’t fight in the true sense of what I have read in
books. The typical sibling fights. I tell them about mine, keep
reminiscing about my childhood and how their Mama never fights. Best
part is, my kids seem to have inherited some of my brother’s habits,
words and mannerisms. And my parents get so excited when they observe
them doing it. Same happens with Athamma as well. She keeps remembering
how some things that Peddu does, reminds her of hubby dear in his
younger age. Guess parents just need something to remember their kids
younger years!

Now getting back to the dish of the day,
this is a simple rice with peas, garnished with lots of cashews. Very
healthy and spicy as well to some extent. Try this and enjoy!

Cashew Nut Peas Pulao

Ingredients Needed

Basmati Rice – 2 cups
Onion, julienne  – 1/2
Onion, minced – 1 & 1/2 medium
Green peas 1 cup, parboiled
Ginger Garlic paste – 1/2 tsp
Green Chilies – 3 long
Mint Leaves – handful
Oil – 2 tbsp

Cashew nuts – 1/2 cup
Ghee 2 tbsp

Whole Spices

Bay leaf  – 1 long
Marati Mogga – 2 medium
Cumin Seeds – 1/2 tsp
Anise Star – 1
Cloves – 2
Cinnamon – 1″
Cardamom – 2
Salt to taste
 

How to make Cashew nut peas pulao.

Wash and soak the basmati rice for 15 – 20 mins.

In a non stick pan, heat the oil, add all the whole spices and saute well.

Then add the onion julienne, chopped green chilies, mint leaves and saute well till the onions turn colour.

Next add the minced onions. ginger garlic paste and saute well till everything gets cooked.

Now add fresh peas and saute.

Add the drained rice and combine everything well.

Add 3 cups of water and bring to boil. Then simmer and cook with lid covered till the rice is cooked well.

Now roast the whole cashews in ghee and pour over the cooked rice and give it a stir.

Serve with Masala Gobi

  1. as a kid i have been trained to respect kaju as a luxury, gourmet food although it was used very frequently..i often deep fry them for my pulavs and rice dishes and wherever possible…so am sure this combination is heaven for me

  2. If you give this rice to me I will pic both peas and cashew and then have the rice:) some how I don't like the nutty flavor. nice presentation… I am like your brother always give up every ting to my sis and brother, they both fight a lot I used to enjoy there fight:)
