I was thinking the carrots that I used was sweet and this usili might end up being sweet. However it was all balanced well.
This stir fry is such a healthy and protein packed dry saute. I made this from PJ version.
Carrot – 4 medium
Channa Dal – 1/2 cup
Red chillies – 4
Coconut – 2 tbsp
Salt to taste
Mustard, Urad Dal – 1 tsp
Channa dal – 1 tsp
Red chillies – 3 – 4
Curry leaves a few
Oil – 2 tsp
How to make the Usili
Soak chaana dhal in water for 1/2 hour.
Then coarsely grind it along with red chilies, cumin seeds.
Make a paste and MW in a greased bowl for 1 min with 30 secs spurts. Grate into fine powder.
Wash and finely chop the carrots. MW for 10 mins.
In a wide kadai, add oil, saute the seasoning ingredients, then add the grated lentil.
Saute well and then add the boiled carrots.
Adjust salt and serve hot. This takes about 10 mins
